The world is consuming whiskey faster that it can be produced and aged. Cracking the code to "rapid aging" would change whiskey as we know it. The goal is controversial, opposed by whiskey "purists"  but our approach is as pure as it gets. 
-No added chemicals or colors
-Whiskey remains in an oak barrel 
-Ability to quantify aging equivalence through live data spectrometers
-Does not use "chipping" or making "tea" with wood chips for increase surface area. 

Of course purists are against chemicals, steel vats, colorants, and chipping. With those eliminated, we aim to achieve rapidly aged whiskey without losing quality. Chipping allows oak to lend some of its qualities to virgin whiskey but the chipping process fails to allow the oak to take away sour, harsh, and other unwanted properties away from the whiskey in return. The secret is to mimic the natural aging process that allows for whiskey to exchange flavors and colors with oak deep within the wood's structure.
